INGREDIENTS

For the stew:

2 tbsp olive oil

1 onion, diced

2 stalks celery, finely sliced

3 cloves garlic, finely sliced

2 carrots, sliced

250g Denny Portabellini Mushrooms

1 ½ cups brown lentils

1 litre vegetable stock

1 tin chopped tomatoes

1 x Denny Creamy Stroganoff Cook in Sauce

4 baby marrows, diced

1 cup polenta

4-5 cups water (depending on how creamy you want it)

For the filling:

500g mince (beef or lamb or ostrich)

400g DENNY Button Mushrooms

2 onions, sliced

¼ cup tomato paste

2 cups stock

½ cup red wine

1 tbsp thyme

INGREDIENTS

8 DENNY Portabella mushrooms

4 free-range beef patties (150-200g)

2 tomatoes

1 red onion

50g fresh rocket

Olive oil

Salt

Freshly ground black pepper

For the avonnaise:

2 ripe avocados

¼ cup fresh coriander, chopped

¼  cup red onion, diced

½ cup greek yoghurt

1 Tbsp lemon juice

1 Tbsp jalapeño, diced

METHOD

Prep burger toppings by slicing the onion, tomatoes and washing the rocket. Set aside.

INGREDIENTS 

100g goat’s cheese (chevin style)

200g DENNY Exotic Mushrooms

Fresh baguette, sourdough or your favourite loaf

2 cloves garlic, crushed

60ml olive oil

1 handful chives, finely chopped

1 tsp chilli flakes

2 Tbsp sour cream

Sea salt flakes

METHOD

Slice bread into six 1cm slices.

Combine crushed garlic with olive oil and mix. Place slices on a rack on top of a baking sheet.

INGREDIENTS

400g DENNY Exotic Mushrooms, sliced

2 Tbsp butter

1 red onion, diced

2 cloves garlic, finely diced

1 Tbsp fresh thyme

1 tin DENNY Cream of Mushroom Soup

2 cups vegetable stock

Sea salt

Freshly ground black pepper

METHOD

Heat butter in a large pot. Add the onion, garlic and thyme and sauté until softened. Add the mushrooms and continue to cook until tender.

Reserve one large spoonful of the cooked mushrooms for dressing the soup and keep them warm in a small pan.
